Broccoli Brussels Sprouts Beef Bowl w/Mandarin Orange Sauce
Broccoli Brussels Sprouts Recipe Below ↙️
Serves: 4
Meat + Veggies:
🐺1 lb. very lean ground beef (or turkey; reserve cooking liquid)
🐺1-1/2 TB sesame oil
🐺2 C. brussels sprouts, 1/4 inch slices
🐺2 C. broccoli florets
Sauce:
🐺3/4 C. orange juice; freshly squeezed (5-6 mandarins)
🐺1/2 C. broth (use reserved liquid; supplement w/broth or water)
🐺2 TB cornstarch
🐺Zest from 1 orange
🐺1 tsp fish sauce
🐺2 TB rice vinegar
🐺3 TB lite soy
🐺1/2 tsp ground ginger
🐺1/2 tsp black pepper
🐺1/2 tsp garlic powder
🐺1 TB stevia brown sugar blend
🐺Cooked brown rice or quinoa

Add 1/2 TB of sesame oil in a large skillet over med-high heat. Break up meat, cooking until browned. Lightly season with salt + pepper. Reserve liquid if using lean meat; if you have greasy meat, discard liquid. Set aside.
Add remaining oil in the skillet over med-high heat. Add sprouts + sauté 1-2 mins, stir once. When beginning to soften slightly + browning, add broccoli. Stir to coat with oil. sauté an addict’s 1-2 mins. Turn off heat + remove from burner.
While veggies cook, prep the sauce. For orange juice, slice an end off each orange and use a citrus juicer to squeeze approx 3/4 C. Whisk together with broth + cornstarch. Add remaining ingredients. Stir until dissolved.
Add meat + sauce to the skillet of sprouts + broccoli. Stir to coat with sauce. Bring to boil over med-high heat then turn down to med-low. Cook until desired thickness, approx 1-3 mins. Serve over hot cooked grains.
Great additions: sliced almonds, green onions, and/or pieces of chopped mandarin oranges. Enjoy!
