Serves 4

Consider making cooking your own rice for maximum nutritional value + flavor!

Rice:
๐Ÿบ 1-1/2 C. dry brown rice
๐Ÿบ 1-1/2 C. beef broth
๐Ÿบ 1/2 tsp sea salt
๐Ÿบ 1 tsp lime juice
๐Ÿบ 1 tsp avocado or olive oil
๐Ÿบ 1 tsp cumin powder
๐Ÿบ 2 tsp dried cilantro

Using a pressure cooker (if you donโ€™t have a pressure cooker, use instant brown rice to save time), add all ingredients, stir. Add lid and pressure cook for 30 mins. Natural release 10 mins. Fluff + cool.

Protein:
Heat oil in a skillet over med heat, brown meat. Add peppers + onions, cook until softened; 3-5 mins. Add seasoning + liquid. Bring to a soft boil, turn down to simmer, and thicken. Set aside, cool.
๐Ÿบ 1 TB olive oil
๐Ÿบ lb. lean ground turkey or chicken
๐Ÿบ 1/2 green pepper, sliced
๐Ÿบ 1/2 onion, sliced
๐Ÿบ 1 packet taco seasoning
๐Ÿบ 1/3 C. water or unsalted broth

Toppings:
๐Ÿบ 1 C. canned black beans, no salt added
๐Ÿบ 2 C. Mixed greens or baby spinach
๐Ÿบ 1/2-3/4 C. feta, cotija, or queso style crumbles
๐Ÿบ 1/2 C. prepared salsa or pico de gallo
๐Ÿบ 2 green onion stalks, diced
๐Ÿบ Avocado and/or corn make great additions

๐Ÿบ 1/4 plain Greek yogurt, 0% + 1-1/2 tsp of spicy ranch dressing (Hidden Valley) mix OR 1 tsp prepared ranch + 1/2 tsp sriracha. Stir well.

Top rice with protein/veggies, fresh greens, beans, cheese, salsa, spicy ranch, + green onions. Enjoy
