Easy Burrito Bowl Recipe

Consider making cooking your own rice for maximum nutritional value + flavor!
Rice:
🐺 1-1/2 C. dry brown rice
🐺 1-1/2 C. beef broth
🐺 1/2 tsp sea salt
🐺 1 tsp lime juice
🐺 1 tsp avocado or olive oil
🐺 1 tsp cumin powder
🐺 2 tsp dried cilantro
Using a pressure cooker (if you don’t have a pressure cooker, use instant brown rice to save time), add all ingredients, stir. Add lid and pressure cook for 30 mins. Natural release 10 mins. Fluff + cool.
Protein:
Heat oil in a skillet over med heat, brown meat. Add peppers + onions, cook until softened; 3-5 mins. Add seasoning + liquid. Bring to a soft boil, turn down to simmer, and thicken. Set aside, cool.
🐺 1 TB olive oil
🐺 lb. lean ground turkey or chicken
🐺 1/2 green pepper, sliced
🐺 1/2 onion, sliced
🐺 1 packet taco seasoning
🐺 1/3 C. water or unsalted broth
Toppings:
🐺 1 C. canned black beans, no salt added
🐺 2 C. Mixed greens or baby spinach
🐺 1/2-3/4 C. feta, cotija, or queso style crumbles
🐺 1/2 C. prepared salsa or pico de gallo
🐺 2 green onion stalks, diced
🐺 Avocado and/or corn make great additions
🐺 1/4 plain Greek yogurt, 0% + 1-1/2 tsp of spicy ranch dressing (Hidden Valley) mix OR 1 tsp prepared ranch + 1/2 tsp sriracha. Stir well.
Top rice with protein/veggies, fresh greens, beans, cheese, salsa, spicy ranch, + green onions. Enjoy
