🐺1 TB olive, avocado, or coconut oil
🐺1-1/2 C. dry brown rice, rinsed
🐺 2 C. vegetable broth, unsalted
🐺1/2 C. dried lima beans, rinsed
🐺 2 large carrots, halved + sliced
🐺 1/2 medium onion, diced
🐺 1 stalk celery, thin slices
🐺 1 tsp sea salt
🐺 1 tsp. thyme
🐺 1/2 tsp. oregano
🐺 1/2 tsp. cumin
🐺 1 bay leaf

Heat oil on Sauté/More setting on Instant Pot. Add carrot, onion, + celery. Toss in thyme, oregano, salt, + cumin. Cook 2-3 mins. Turn off.
Switch to Pressure Cook/High setting. Add rice, beans, broth, + bay leaf. Seal lid and set time for 1 hour. Naturally release for 15 mins.
Remove lid + fluff rice. Season with additional salt/pepper as needed. Enjoy!
