🐺1 head cauliflower, 2-1/2-3 lbs; leaves/stalk peeled + cut into chunks
🐺1 C. water (For instant pot)
🐺2 TB salted butter
🐺3 TB plain greek yogurt, any % (0% works great)
🐺2 tsp. minced garlic
🐺1 tsp. onion powder
🐺1/4 C. grated parmesan
🐺4-5 slices of turkey bacon, cooked + crumbled
🐺2-3 green onion stalks, chopped

Place water in the bottom of the instant pot insert. Use a steamer basket or trivet to cook cauliflower. Place inside the pot. Replace lid + use Pressure Cook mode on high for 5 minutes. Allow to naturally steam release for 3-5 mins before releasing pressure.
Remove basket of cauliflower + drain liquid. Use a fork to mash the largest of the chunks. Add butter, yogurt, garlic, onion powder, + parmesan. Stir a couple of times. Use an immersion blender or blender to puree to mashed consistency preference. Season with sea salt + fresh cracked pepper to taste. Sprinkle on bacon + green onions. Serve immediately.
