Air-Fryer Stevia + Greek Yogurt Blueberry Donut Recipe
Yogurt Blueberry Donut Recipe Below ↙️
Makes: 2 Doughnuts
🐺 4 TB wheat pastry flour or white/wheat blend + extra for shaping the dough
🐺 1 TB protein powder (vanilla, berry, cinnamon flavors, etc.)
🐺 5 oz blueberry greek yogurt; any % (4% for richer/fluffier donut; 0-2% shaves calories)
🐺 2 TB stevia powder
🐺 1 tsp cinnamon
🐺 1/4 tsp baking powder
🐺 pinch of sea salt
🐺 2 TB chopped frozen blueberries; lightly dusted with flour before adding
🐺 1 tsp stevia brown sugar blend + pinch cinnamon
🐺 optional: 1 TB confectioner’s sugar + drops of milk to make a glaze
Preheat/lightly spray the air fryer to 390 while you mix together the dough.
Whisk together flour, stevia, cinnamon, baking powder + sea salt. Use a spatula or fork to work in yogurt. Mix until forms somewhat sticky dough. Sprinkle flour on a work surface, scrape out dough into a ball. Sprinkle a little flour on top to eliminate stickiness. Fold/knead 3-4 times. Flatten slightly, sprinkle frozen blueberries on top. Fold into the dough until mixed through; 2-3 times. Divide into 2 balls of dough. Gently form a rope, shape into a circle; pinching ends together. Sprinkle/gently press the brown sugar blend on top.
Air fry until golden brown; 13-15 minutes. They will spring slightly to touch. Allow cooling. If using glaze, mix a few drops of milk into 1-2 TB confectioner’s sugar until thinner consistency. Drizzle over top. Enjoy!
