Serves: 4
🐺8 oz whole-grain spaghetti
🐺1/2 tsp ginger
🐺1/2 tsp chili powder
🐺1/2 tsp sea salt
🐺1-1/2 TB sesame oil
🐺7-8 large bok choy leaves, chopped into large pieces
🐺1/4 tsp sea salt
🐺1/4-1/2 tsp red pepper flakes
🐺1 TB salted butter
🐺1/2 green onions, chopped
🐺2 tsp minced garlic
🐺2 TB tomato paste
🐺1/4 C. honey
🐺2 TB reduced-sodium soy or coconut aminos
🐺1 TB apple cider vinegar
🐺1/2 C. chicken broth + 2 TB reserved pasta water
🐺1 lb. frozen precooked turkey meatballs, thawed (If using homemade/uncooked; brown meatballs in oil first and set aside.)

Cook noodles according to package time/directions; add the ginger, chili powder, + salt to the water before cooking. Drain the liquid, reserving 2 TB, and set pasta aside.
Heat oil in a large skillet over medium heat. When hot, add the bok choy stalks + pepper flakes/sea salt; sauté 3-4 mins. Add remaining leaves; sauté addt’l min. Remove from pan.
Add butter to skillet (medium heat); add 1 tsp. sesame oil if needed. Add green onions + garlic; cook 1-2 mins until browned. Stir often. Add tomato paste + cook 1 min. Deglaze pan with vinegar. Whisk in honey, soy, chicken broth, + reserved pasta water until combined. Add meatballs+ coat with sauce. Bring to boil + immediately lower heat to simmer. Cook until thickened; approx. 2-4 mins. Turn off heat.
Add sauteed bok choy + cooked noodles. Stir to distribute the sauce. Season with sea salt + cracked black pepper as needed.
