Makes: 1 dozen
🐺1/2 C. brown sugar stevia blend
🐺1/3 C. + 1 TB coconut oil, melted
🐺1 egg, whisked
🐺1 tsp. vanilla extract
🐺1 C. peanut powder, regular or chocolate (such as PB2 brand)
🐺2 TB dark cocoa powder, unsweetened
🐺1/2 tsp. baking powder
🐺1/4 tsp. salt
🐺1/2 C. dark chocolate chips, 60-70%

Preheat oven to 350. Spray the baking sheet with neutral oil or line with parchment paper.
Using a large bowl and hand blender or stand mixer, cream together sugars and oil. Add egg + extract. Mix thoroughly. Next, add peanut powder, cocoa, baking powder, + salt. Blend on medium speed until the mixture binds into a cookie dough consistency. Scrape down the bowl and add chips. Mix on low for a few seconds to incorporate.
Scoop out in even tablespoon-ish-sized balls. Roll, place cookie dough balls on the prepared sheet. Use a fork to make the classic criss-cross pattern, flatting very slightly.
Bake on middle rack 12-14 mins. They will look “set” but have a softness still. They will harden slightly as they cool. Be careful not to overbake. Cool sheet on a wire rack for 10-15 mins. Transfer cookies directly to the rack to finish cooling. Enjoy!
