Makes: 1 Loaf
🐺1-3/4 C. buttermilk, 1%
🐺1 egg, whisked
🐺3 C. wheat flour
🐺1-1/4 C. bread flour (or all-purpose flour)
🐺2 TB. erythritol
🐺1 TB stevia brown sugar blend
🐺1 tsp. baking soda
🐺1 tsp. salt
🐺6 TB cold salted butter, diced (tip: lightly sprinkle with flour to keep pieces from sticking together)
Preheat oven to 400 + prepare cast iron skillet or baking stone with oil.
Bowl 1: Whisk together buttermilk + egg.
Bowl 2: Whisk together flours, baking soda, salt, stevia, erythritol. Add diced butter. Using hands or pastry cutter, break up butter pieces into flour mixture until crumbly. You want them pea-size or smaller. Lightly flour your workspace.
Using a spatula, begin scraping buttermilk mixture into flour and stirring. Once all the milk is added, mix everything until just combined. Turn out onto floured workspace.
Fold/knead the bread a few times to work the excess flour into the dough. It will be thick and have texture; do not overwork or try to smooth it too much. Pat into a rounded shape.
Place in prepared skillet or stone, slice an “X” shape on the top. I like to slice mine deeper, around 1-1/2 inches deep, but it’s not necessary.
Place on center rack and bake around 43-45 minutes. The top and sides will be golden brown and crusty. If your bread begins to brown too much, you can cover it with foil.
