Skillet Baked Cod Recipe Fillets Panko Crust

Serves: 4-6
This recipe uses a light crust topping instead of breading the entire fillet. Preheat oven to 450. Plan on baking for 15-20 mins.
Cod:
🐺 1-1/2 lbs. cod or whitefish fillets; thawed or fresh
🐺 1 TB avocado or olive oil
🐺 1/2 TB salted butter
🐺 1 tsp. lemon thyme seasoning (or make your own: 1/2 tsp thyme + 1/4 tsp lemon zest + 1/4 tsp sea salt)
Add oil + butter to an iron skillet. Turn on med. heat to melt butter only, turn off immediately + remove from burner.
Use a paper towel to absorb extra liquid off fillets. Sprinkle lemon + thyme seasoning on top of each. Next, prepare the toppings.

Topping: Mix together in a small bowl.
🐺 1 TB lite mayo (plain greek yogurt will work)
🐺 1 tsp. lemon juice
🐺 1/2 tsp. garlic powder
🐺 1/2 tsp. onion powder
Crust: Mix together in a small bowl.
🐺 1/4 C. panko crumbs (sub w/wheat crumbs, crushed almonds, or crushed woven wheat-style crackers)
🐺 1 TB grated parmesan cheese
🐺 Pinch of sea salt + pepper
Brush the entire top of each fillet with w/equal portions of the mayo mixture. Sprinkle on crumb mix. Gently press crumbs to help stick to the sauce.
Place skillet on middle rack. I suggest using a digital meat thermometer if you have one. The fish is finished when it reaches 145 degrees internally. Tip: The fillet needs approximately 6-8 mins. of cook time per 1/2 inch of thickness, at 450. Let’s assume your fillets are 1 in thick; for this size fillet and the amount used in the recipe; you should expect to bake 15-20 mins.
Topping will be golden brown and fish will flake easily. Serve immediately. Pairs well with whole grains + veggies, especially roasted or steamed green varieties. Enjoy!
