Serves: 8
Crust:
🐺1 C. whole wheat flour
🐺1 C. bread flour or all-purpose
🐺2/3 C. avocado or olive oil
🐺1/4 C. orange juice ( Trop50 for reduced sugar)
🐺1 TB agave syrup or honey
🐺1/2 tsp sea salt
Filling
🐺2 large red onions, 1/4-1/2 in thick slices
🐺1 TB salted butter + 1 tsp. olive oil
🐺2 C. baby red potatoes, thinly sliced
🐺1/2 tsp. corn starch
🐺4-5 C. baby spinach
🐺3 cloves garlic, minced
🐺5 oz. crumbled soft blue cheese
🐺4 eggs
🐺1/2 C. milk, 2%
🐺1/2 C. greek yogurt, plain
🐺1-1/2 tsp. sea salt
🐺1 tsp. pepper
🐺1 tsp. veggie or chicken bouillon
🐺3 green onion stalks
🐺1/4 C. shredded cheese
🐺1/4 tsp. red pepper flakes
🐺1/4 tsp. smoked paprika

Preheat oven to 350. Lightly spray a deep casserole dish or large deep pie dish.
Using a bowl, whisk together flours. Add oil, juice, syrup/honey, + salt. Stir together until it forms a crumbly dough. Press crumbs into the bottom of the dish + work upsides. Prick a few times on bottom/sides w/fork. Bake 10 mins.
Add 1 TB butter to a skillet over med. heat. Add onions + saute until softened; 4-5 mins. Set aside. Add 1 tsp oil + saute spinach/garlic until wilted. Remove from heat. Lightly sprinkle (uncooked) potatoes with corn starch. In a separate bowl, whisk together eggs, milk, yogurt, bouillon, salt, pepper.
Remove crust. Spread 1/2 of onions into the bottom. Sprinkle 1/2 of blue cheese on top. Next, layer 1/2 of potatoes. Add the spinach + garlic. Add remaining onions, blue cheese, + end w/ potatoes.
Pour in egg mixture. Gently tap the dish. Top with green onions sprinkles with cheddar, red pepper flakes, + paprika.
Bake, uncovered, for 50-55 mins until center is set. It will spring to touch. Allow quiche to rest 10-15 mins before slicing.
