Turkey Quinoa Garden Veggie Soup Recipe

🐺1 TB olive oil
🐺1/2 lb. fresh green beans, trimmed + 1 in. pieces
🐺2 carrot stalks, halved + sliced
🐺1 small onion, chopped
🐺2 celery stalks, chopped
🐺1/2 lb. turkey (or chicken) cooked + shredded* see note
🐺1/2 C. dry quinoa
🐺5 C. chicken or veggie broth
🐺2 TB fresh basil, chopped (1 tsp dry)
🐺1/2 tsp. oregano
🐺1/2 tsp. dill
🐺1 tsp. sea salt
🐺1/2 tsp. rosemary
🐺1/2 tsp. thyme
Add oil to instant pot insert or large cooking pot. Sauté green beans, carrots, celery, onion for 3-4 mins. Add basil, oregano, dill, rosemary, thyme, salt. Add broth; scrape bottom of the pan. Add cooked turkey + quinoa. Stir.
Pressure cook on high for 8 mins + 5 mins natural release. If using stovetop method, bring to boil then cover + simmer 20-25 mins until veggies + quinoa are cooked through.

*If you do not have cooked chicken or turkey on hand; use a fresh chicken breast. Add 10 minutes to cook time; shred in the pot.
