🐺8 slices bacon
🐺10 oz wheat pasta, like fusilli; reserve liquid
🐺3 tsp. boullion, veg or chicken
🐺1 med yellow squash, 1/4 in. slices
🐺1-1/2 C. fresh green beans, chunks
🐺2 TB salted butter
🐺2 TB bacon fat, strained
🐺1-1/2 tsp. minced garlic
🐺1 tsp. salt
🐺1 tsp. cracked black pepper, divided
🐺1 med. head cauliflower, lg. chunks
🐺2 TB light mayo
🐺1/2 C. cottage cheese, 2%
🐺1/4 C. parmesan
🐺1/3-1/2 C. pasta water
🐺1/2 tsp. onion powder
🐺1 C. shredded cheddar + mozz cheese, 2%

Preheat oven to 375. Lightly spray 13×9 glass dish w/ cooking spray. Lots of steps at once, but easy enough. I used: Instant Pot, griddle, large pot, food processor, + oven.
Pressure Cooker: Add cauliflower with 1/2-1 C. water; pressure cook 5 mins; immediate steam release. Leave water, set caul. aside + cool. Add g. beans + pressure cook 2 mins. Immediate release; remove beans + cool.
Griddle/Skillet: Fry bacon over med-high heat until crisp. Remove + crumble. Add squash to skillet + cook 2-3 mins; flipping halfway through. Remove + blot w/paper towel. Lightly season w/salt.
Pot: Add bouillon + approx. 5-6 cups water. Add enough to just cover. Bring to boil. Add noodles; cook until al-dente. Drain + reserve liquid. Add butter, beans, 1/2 of bacon + 2 TB fat, garlic, salt, pepper to noodles. Stir.
Sauce: In a small bowl, whisk 1/3 C. pasta liquid, egg, cottage cheese, parm, + mayo. Using a blender/food processor, add cauliflower. Add liquid + blend until smooth.
Layer noodles in the baking dish. Next, spoon on cauliflower sauce in a smooth even layer. Add squash. Sprinkle on cheese + remaining bacon.
Add to middle rack + bake 25-30 mins until lightly golden. Allow sitting for 10 mins before cutting. Enjoy!
