These cookies are so simple and extremely easy to make. They’re crumbly soft and tender because of the confectioner’s sugar. Swapping in half stevia-based sweeteners helps cut down the sugar, but does not sacrifice flavor or texture.
🐺 1/2 C. salted butter, softened
🐺 2 TB confectioners sugar
🐺 1 TB erythritol
🐺 1 TB stevia brown sugar blend (Truvia)
🐺 1 tsp. vanilla extract
🐺 3/4 C. all-purpose flour
🐺 1/4 C. fine white wheat or wheat pastry flour
🐺 1 tsp. ground cinnamon

Preheat oven to 350. Prep a baking tray/cookie pan with a light spray of neutral oil.
At medium-high speed, use a handheld blender or stand mixer to cream together the butter, sugars, + extract until fully blended; about 1 min. Scrape down bowl.
Add flours + cinnamon to the bowl. Use medium speed to begin working the flour into the dough. It will be crumbly at first and slowly start binding together after a couple of minutes. Once dough sticks together and forms a ball-like dough, it’s ready.
Lightly flour a workspace. Roll the dough out to approximately 1/2 inch thick, keeping a rectangular shape. Cut into 12 bars. Gently move to bake pan, reshaping as needed. Use a fork to poke a few holes in the top for decoration.
You can chill these before baking, but I’ve had the same success baking them at room temp.
Bake on the middle rack for 15-18 minutes until lightly golden around the edges. Cool on a rack for several minutes before serving.
For an extra treat, dip in dark chocolate, pair with nut butter, jam, honey, or enjoy as is. A must for coffee + tea! Enjoy.
