Sloppy Nachos cheese recipe with Pepper jack Sauce

🐺 1 lb. ground turkey
🐺 1 TB olive oil
🐺 ½ onion, diced
🐺 ½ green pepper, diced
🐺 1 TB tomato paste
🐺 1 tsp onion powder
🐺 1 tsp chili powder
🐺 1/4 tsp sea salt
🐺 1/4 tsp red pepper flakes
🐺 2 TB apple cider vinegar
🐺 1 tsp Worcestershire sauce
🐺 1 tsp minced garlic
🐺 15 oz tomato sauce
🐺 1/4 C. reduced sugar ketchup
🐺 2 TB stevia brown sugar blend
🐺 1/2 tsp beef bouillon powder (opt)
🐺 1 tsp Dijon mustard
🐺 1/2 C. beef broth
🐺 1/2 C. milk, 2%
🐺 1 tsp cornstarch
🐺 1 cup shredded Pepperjack cheese
🐺 pinch sea salt
Heat olive oil in a skillet over medium heat. Add ground turkey and cook until browned; 3-4 mins. Add green pepper and onion and cook until softened; add 3-5 mins. Remove from the skillet.
Sloppy Joe Sauce:
Add + cook tomato paste and spices (onion, chili, salt, red pepper) until fragrant, 1 min. Turn heat to med-high and add Worcestershire + vinegar to deglaze, scraping the bottom of the pan. Add minced garlic. Cook 30 seconds; add tomato sauce, ketchup, sugar, bouillon, + mustard. Stir, bring to boil, immediately turning down to simmer. Allow thickening over 5-7 mins, stirring occasionally. Stir in turkey, peppers, + onions. Simmer additional 2 mins.
Cheese Sauce:
In a microwaveable bowl, whisk together milk, broth, + cornstarch. Microwave on high for 30-sec increments, stirring in between. It will be ready around 2-3 mins total. When thickened, immediately add freshly shredded cheese, whisking in to melt. Should be a thinner drizzling consistency. Sprinkle in sea salt.
Assemble by layering tortillas on first; sloppy joes, then drizzling cheese sauce over. Throw on a pinch of cilantro, green onions, etc for a garnish. Enjoy!
