Enchilada Nachos Recipe Below โ๏ธ

Serves: 4-6
๐บTortilla chips; multigrain or blue corn are extra delish
๐บ 1 TB olive oil
๐บ 1 lb of 90-93% lean ground beef or turkey
๐บ 1 packet taco seasoning; less sodium
๐บ 1 c. black beans; seasoned + cooked dry beans are delish
๐บ 1/2 red onion; sliced
๐บ 1/2 c. sweet corn
๐บ 1 to 1-1/2 c. favorite shredded cheese (2%, cheddar, etc.)
๐บ 1/2 c. prepared salsa or pico de gallo
๐บ 1/3 c. plain greek yogurt (sour cream swap)
๐บ Opt for cilantro, green onions, etc.
Enchilada Sauce (Store extra in the fridge)
๐บ 2 TB wheat flour
๐บ 1 TB o. oil
๐บ 8oz tomato sauce
๐บ 1 c. chicken broth
๐บ 1 1/2 TB chili powder
๐บ 1 tsp cumin
๐บ 1/4 tsp garlic
๐บ 1/2 tsp onion powder
๐บ 1/8 tsp oregano
๐บ 1/8 tsp salt
๐บ 1/8 tsp dark cocoa
๐บ 1/2 tsp apple cider vinegar
๐บ pinch stevia blend brown sugar
Heat oil in a skillet over medium heat. Add sliced onions, cook 3-4 mins until translucent. Push to the edges of the pan. Put beef in the center, break up, and brown until cooked through. Add taco seasoning, ing packet instructions for added liquids (typically 1/2-3/4 cup; thickened). Remove from heat.
Sauce: Over med. heat, warm oil for 1 min. Whisk in flour until blended. Allow cooking 1-2 mins over medium-low heat. Whisk in chili powder, cumin, garlic + onion powder, oregano, salt, and cocoa. Cook for 1-2 mins until fragrant; do not burn.
Whisk in chicken broth + tomato sauce until smooth. Bring to boil over medium-high heat, then turn down + simmer 5-7 mins, stirring occasionally. Cook until thickened. Stir in a.c. vinegar, a pinch of brown sugar, and season with salt + pepper to taste.
Layer chips first, cheese (melt 20-30 seconds in the micro if desired), enchilada sauce, beef, corn, beans, yogurt, salsa, more enchilada sauce, + cilantro. Enjoy!
