Enchilada Nachos Recipe Below ↙️

Serves: 4-6
🐺Tortilla chips; multigrain or blue corn are extra delish
🐺 1 TB olive oil
🐺 1 lb of 90-93% lean ground beef or turkey
🐺 1 packet taco seasoning; less sodium
🐺 1 c. black beans; seasoned + cooked dry beans are delish
🐺 1/2 red onion; sliced
🐺 1/2 c. sweet corn
🐺 1 to 1-1/2 c. favorite shredded cheese (2%, cheddar, etc.)
🐺 1/2 c. prepared salsa or pico de gallo
🐺 1/3 c. plain greek yogurt (sour cream swap)
🐺 Opt for cilantro, green onions, etc.
Enchilada Sauce (Store extra in the fridge)
🐺 2 TB wheat flour
🐺 1 TB o. oil
🐺 8oz tomato sauce
🐺 1 c. chicken broth
🐺 1 1/2 TB chili powder
🐺 1 tsp cumin
🐺 1/4 tsp garlic
🐺 1/2 tsp onion powder
🐺 1/8 tsp oregano
🐺 1/8 tsp salt
🐺 1/8 tsp dark cocoa
🐺 1/2 tsp apple cider vinegar
🐺 pinch stevia blend brown sugar
Heat oil in a skillet over medium heat. Add sliced onions, cook 3-4 mins until translucent. Push to the edges of the pan. Put beef in the center, break up, and brown until cooked through. Add taco seasoning, ing packet instructions for added liquids (typically 1/2-3/4 cup; thickened). Remove from heat.
Sauce: Over med. heat, warm oil for 1 min. Whisk in flour until blended. Allow cooking 1-2 mins over medium-low heat. Whisk in chili powder, cumin, garlic + onion powder, oregano, salt, and cocoa. Cook for 1-2 mins until fragrant; do not burn.
Whisk in chicken broth + tomato sauce until smooth. Bring to boil over medium-high heat, then turn down + simmer 5-7 mins, stirring occasionally. Cook until thickened. Stir in a.c. vinegar, a pinch of brown sugar, and season with salt + pepper to taste.
Layer chips first, cheese (melt 20-30 seconds in the micro if desired), enchilada sauce, beef, corn, beans, yogurt, salsa, more enchilada sauce, + cilantro. Enjoy!
