Ground Turkey Cottage Pie Sweet Potato Topping
Cottage Pie Sweet Potato Recipe Below โ๏ธ

๐บ1 lb. lean ground turkey
๐บ1 TB olive oil + 1 Tb unsalted butter
๐บ 2-1/2 C. of diced veggies (I used 1/2 C. corn, 1/2 C. peas, 1/2 C. onion, 1/2 C. carrot, 1/2 C. celery)
๐บ1 tsp dried rosemary
๐บ1 tsp onion powder
๐บ1 tsp. dried thyme
๐บ1/4 tsp. dried sage
๐บ1 tsp. Italian herbs
๐บ1/2 tsp sea salt
๐บ1/2 tsp coarse pepper
๐บ 1 tsp minced garlic
๐บ 1 TB Worcestershire sauce
๐บ 1 tsp light soy + 1 tsp Asian fish sauce (both optโl, but recomm)
๐บ 2 C. beef broth
๐บ 1 C. milk
๐บ 3 TB corn starch
๐บ 1 med. sweet potato; peeled, cooked + mashed
๐บ 1- 4oz instant mashed potatoes; prepared (2 C. prepared)
Preheat oven, 400. Lightly spray casserole dish (13×9, etc).
Steam or pressure cook sweet potato and mash until smooth. Add a little butter and salt/pepper. Prepare instant potatoes. Mix together + set aside. If theyโre really thick, thin slightly with milk or water for easier spreading later.
Cottage Pie with Sweet Potato Heat oil + butter over medium heat, add turkey. Brown. Remove, leaving the liquid in the pan. Add veggies w/dried herbs, salt/pepper + cook over med. heat until softened; 3-4 mins. Add minced garlic. Cook adds min.
Turn heat to med-high and add Worcestershire, soy, fish sauce to deglaze. Scrape up the bottom bits. Gently stir in beef broth.
Whisk corn starch into milk. Slowly add to the pan, stirring. Bring to boil, then turn down the heat to med or med-low. Allow mixture to simmer and thicken. Add ground turkey.
Add meat + veggie mixture to dish. Spoon and smooth potatoes over top with the spatula. Bake 25-30 mins until bubbly and potatoes lightly golden. Allow 10 mins before serving. Enjoy!
