🐺1 lb. lean ground beef or turkey
🐺2 TB olive oil; divided
🐺1-1/2 cup chicken or beef broth
🐺3 TB tom. paste
🐺2 TB fish sauce (or soy)
🐺1 TB Worcestershire sauce
🐺1 TB soy sauce
🐺1 tsp cocoa
🐺1 med. onion, diced
🐺1 med. green pepper, diced
🐺4 cloves minced garlic
🐺1-1/2 TB chili powder
🐺1 TB cumin
🐺1 tsp oregano
🐺1/2 tsp basil
🐺1 TB stevia brown sugar or honey
🐺1 tsp salt
🐺1 tsp pepper
🐺1 TB apple c. vinegar
🐺2-15oz cans black beans, kidney, northern, etc.
🐺2-15oz cans diced tomatoes
Corn Bread Dumplings
🐺1 cup cornmeal mix
🐺2 TB stevia
🐺1/4 cup plain g. yogurt
🐺1 TB melted butter
🐺2 TB milk
🐺1/2 cup shredded cheddar
🐺opt’l: a pinch of garlic powder
Use Sauté function on the Instant Pot to heat olive oil; brown/crumble beef. While meat is cooking, use a mixing bowl to whisk together broth, fish sauce, soy, Worcestershire, t. paste, cocoa.
Remove beef in a new bowl, reserving liquid.
In IP: Add oil, onion, g. pepper; cook 2-3 mins. Add garlic for 1 min. Add chili, cumin, oregano, basil, salt, pepper, brown sugar; cook 1 min, until fragrant. Careful: It can burn quickly. Once caramelized, deglaze the bottom of the pot with vinegar. Scrape bottom very well (or else chili will burn later). Add the broth mixture; stir.
Stir in meat. If it is lean, add all the reserved liquid. If higher fat %, only add 1/3-1/2 of the reserved liquid to avoid making your chili too greasy. Add beans and top with tomatoes. Do not stir them in.
Pressure Cook on high; 5 mins. While the chili cooks:
Combine cornmeal flour, egg, stevia, butter, garlic. Will be thick. Fold in cheese.
When chili cook time is up; Quick Release. Give a gentle stir. Drop c.bread batter in 1 TB scoops, like dumplings. Return lid. Add 5 minutes of new cook time to the Pressure Cook mode. Quick-release afterward.
Serve with toppings such as shredded cheese, plain greek yogurt, green onions, etc! Enjoy.
