Baked Lemon Donut recipe Holes

Makes: 1 dozen
🐺 1/2 C. unsalted butter, softened
🐺 1-1/2 C. stevia powder
🐺 1 TB. stevia brown sugar blend
🐺 1/2 tsp. vanilla extract
🐺 1/4 tsp. lemon extract
🐺 1 egg, whisked
🐺 1 TB lemon juice
🐺 1 C. all-purpose flour
🐺 1/2 C. wheat pastry flour
🐺 1-1/2 tsp. lemon zest
🐺 1/4 tsp. sea salt
🐺 1/4 tsp. baking powder
🐺 1/4 tsp. baking soda
🐺 1/2 C. powdered sugar
Preheat oven to 350. Prep a large cookie sheet with parchment.
In a large bowl or stand mixer, use med-high speed to cream together butter + sugars until fluffy. Add whisked egg + extracts. Blend again, until well mixed, approximately 30 secs. Stir in lemon juice. The mixture may look slightly curdled, this is normal.
In a separate bowl, whisk together flours, baking soda + powder, zest, plus salt.
Slowly add the flour mixture to the butter mixture at low speed, increasing as it blends. Mix until fully incorporated and forms a dough.
Prepare a surface by dusting with 1/2 C. powdered sugar. Take donut hole-sized pieces of dough and gently roll them into a ball. Then roll in sugar, covering the entire surface of the ball.
Once finished, bake on the center rack for 12-15 mins. Cool on a wire rack. Enjoy!
