Blueberry Walnut Banana Bread Recipe

🐺3 or 4 large ripe bananas (approx. 2 C.)
🐺3/4 C. skirl or Greek yogurt, 4%
🐺2 eggs
🐺1 TB agave or maple syrup
🐺1/2 C. brown sugar stevia blend
🐺2 tsp. vanilla extract
🐺1 C. whole wheat flour (spoon/leveled)
🐺1 C. all-purpose flour (spoon/leveled)
🐺1 tsp. baking soda
🐺1/4 tsp. salt
🐺1-1/2 tsp. cinnamon
🐺1/2 C. chopped walnuts (add 1/4 C more for topping, if desired)
🐺1/2 C. dried blueberries
Preheat oven to 350. Use baking spray to prepare a loaf pan; typically 8×5.
Bowl 1: Use a stand mixer or hand blender to smash/blend the bananas until smooth + lump-free. Add yogurt, eggs, sugar, syrup, + extract. Blend on medium speed until smooth.
Bowl 2: Whisk together flours, baking soda, cinnamon, + salt.
Using a Danish dough whisk or large wooden spoon to gently combine by slowly adding flour mixture to banana bowl. Scrape down bowl and make sure there aren’t any major clumps, but do not over mix. Gently fold in walnuts and blueberries.
Add to prepared loaf pan. Place on middle rack and bake 50-60 minutes until toothpick comes out of the center clean. You may want to add foil 30-40 mins into bake time, to help avoid over-browning.
Allow to cool completely before slicing. I recommend serving with a little Irish butter + maple syrup! Enjoy!
