Turkey Sausage Mini Quiche Cup Recipe

Preheat oven to 375. Spray muffin tin or inside cupcake liners. Using liners make an easier to remove later.
🐺 8 eggs
🐺 1/2 C. milk (2% or pref. milk fat)
🐺 1-1/2 to 2 tsp. steak seasoning or 1/2 tsp cracked pepper + 1/2 tsp sea salt + 1/4 tsp garlic powder + 1/4 tsp onion powder
🐺 1/4 C. green pepper, diced
🐺 1/4 C. green onion, chopped
🐺 1 Ig. mushroom, finely diced
🐺 1/2 C. shredded cheddar cheese (2% used here)
🐺 1/2 C. (Approx. 2-3) turkey sausage patties; cooked, cooked, + diced
Whisk eggs, milk, + seasonings. Stir in peppers, mushroom, onion, cheese, + sausage.
🐺 1/4 C. plain Greek yogurt or skyr, 0%
🐺 5-6 TB wheat flour
🐺 1/4 tsp garlic powder
🐺 1/4 tsp sea salt
🐺 1/4 tsp Italian herbs (without salt)
Use a fork to mix into a dough. Use pinches of flour as needed to remove any stickiness. Fold/knead 2-3x.
Pinch off even pieces of dough, roll into a ball; place in the center of each muffin tin. Use a jar or spoon to flatten into the entire bottom. Will be very thin. If sticky, lightly spray the utensil with cooking oil.
Bake 2 mins. Remove from oven. Portion out quiche mixture into the muffin tins, pouring over crust bottom. A large cookie dough scoop works well for this.
Bake for 17-20 mins until the center is set, and the top is lightly golden. Use a toothpick to check the center for doneness. Allow cooling slightly before removing and serving. Enjoy!
