Microwave Dark Chocolate recipe No-Bakes

Makes: 12 Cookies
🐺1-1/2 C. stevia powder
🐺1/2 C. brown sugar stevia blend (I always use Truvia)
🐺1/2 C. milk, 1-2%
🐺2 TB salted butter
🐺2 TB coconut oil
🐺1 tsp. vanilla extract
🐺1/2 C. natural peanut butter or nut butter of choice
🐺1/4 C. dark cocoa powder (I use Hershey’s Special Dark)
🐺1/4 tsp. coarse sea salt

-Using a large microwave-safe bowl, stir together the sugars, milk, butter, and coconut oil.
-Microwave on high for 30 seconds; give a quick stir to blend in melting butter/oil.
– Microwave an additional 1 min + 30 secs. Whisk again.
-Cook an additional 30-60 seconds. The mixture will be in a rolling boil and thickening. Do not microwave more than 2 minutes total, from start to finish.
-Remove, immediately stir in peanut butter + vanilla.
-Using a spatula, mix in oats until coated well + evenly distributed.
-Drop by scoopfuls onto a surface lined with a silicone mat or wax/parchment paper.
-Sprinkle sea salt over top
-Allow time to cool + firm up before eating.
