Orange Pound Cake Recipe Below ↙️
Makes: 1 Bundt Cake
🐺1/2 C. salted butter (1 stick or 8 TB)
🐺1/4 C. unrefined virgin coconut oil
🐺1/2 C. granulated sugar
🐺1/2 C. stevia powder
🐺1 TB raw honey
🐺1 TB orange juice
🐺1 C. honey or plain Icelandic or Greek-style yogurt, 4% (I used Siggi’s 4% Touch of Honey Skyr)
🐺1/4 C. buttermilk (or 1/4 C. milk + 1 tsp. white vinegar)
🐺3 eggs
🐺2 tsp. vanilla extract
🐺1-1/2 C. all-purpose flour
🐺1/2 C. wheat pastry flour
🐺1/4 tsp. sea salt
🐺2 tsp. baking powder
🐺1/2 tsp. baking soda
🐺1 tsp. cinnamon
🐺1/2 tsp. ground cloves
🐺2 TB orange zest
Preheat oven to 350 + prepares bundt pan with baking spray.
Bowl 1: Using a blender or stand mixer, cream together butter, coconut oil, sugars, plus honey until light + fluffy. Add yogurt, buttermilk, + eggs. Blend until mixed well. Stir in vanilla, then orange juice.
Bowl 2: Whisk together flours, baking powder/soda, salt, cinnamon, cloves, + zest.
Add half of the flour mixture to the butter mixture in Bowl 1. Stir by hand; as it begins to blend together, add the remaining flour mixture. Stir until everything is just combined, but not over-mixed. Use a spatula to scrape down the bowl.
Batter will be thick. Scrape out into prepared bundt pan, using a large spoon or spatula to smooth out evenly. Bake on the middle rack for 43-48 mins. Toothpick should come out clean, top will be golden, + cake will pull away from the pan when finished.
Cool on a wire rack, 10 mins. before turning out of the pan to finish cooling down. You can use a simple glaze on this cake, but I prefer topping with sugar-free Cool-Whip and lots of fresh fruit. Enjoy!
